Chicken Poppers

Here is the recipe that Alison found in eTools and talked about at the meeting on Sunday. I cannot wait to make them!

We seasoned the coating on these poppers to add amazing flavor to a bar-food favorite. They'll
fly off the plate on Super Bowl Sunday.

Ingredients

3 spray(s) Cooking spray
1 pound(s) Chicken, breast, raw, without skin, without bone, cut into 1-inch cubes
½ cup(s) Egg substitute, fat free
½ cup(s) Bread crumbs, dried, plain, plain or whole wheat, toasted
¼ cup(s) Cornmeal, raw
¼ tsp Garlic salt
¼ tsp Salt, table
¼ tsp Paprika
¼ tsp Pepper, black
¼ cup(s) Salsa, fat free
¼ cup(s) Mayonnaise, fat free
1 Tbsp Cilantro, raw, fresh, minced

Instructions1.
Preheat oven to 425°F.
Coat a baking sheet with cooking spray.
2. Place egg substitute in a shallow bowl. In
another shallow bowl, combine bread crumbs, cornmeal, garlic salt, salt, paprika
and pepper.
3. Dip chicken in egg substitute and then in bread crumb mixture;
turn to coat. Place chicken on prepared baking sheet; coat with cooking spray.
Bake for 5 minutes, flip over and bake until chicken is cooked through, about 5
minutes more.
4. Meanwhile, to make sauce, in a small bowl, combine salsa,
mayonnaise and cilantro; stir well.
Yields about 6 nuggets and 2 tablespoons of sauce per serving.

1/2 cup eggbeaters

Mix together and make pancakes! I tried it and it was really good. I
imagine you could use any flavor smoothie. It was good with just I Can't
Believe It's Not Butter Spray on it, didn't need syrup!

Julia's Eggplant Ratatouille Chili

Eggplant Ratatouille Chili

Ingredients:
1 tbsp canola oil
1 medium yellow onion,
diced
1 medium green pepper, seeded and
diced
2 cups unpeeled, diced
eggplant
2 cloves garlic, minced
2 15-ounce cans red kidney beans,
drained
15-ounce can stewed tomatoes
15-ounce can crushed
tomatoes
2 tbsp dried parsley
2 tsp chili powder
1 tbsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/2 tsp ground black
pepper
3 or 4 large green scallions,
chopped
Directions:
Heat oil in large saucepan. Add onion,
bell pepper, eggplant, and garlic. Cook over medium heat, stirring occasionally,
until vegetables are tender, about 10 minutes
Stir in kidney beans, stewed tomatoes,
crushed tomatoes, parsley, oregano, chili powder, thyme, salt, and pepper. Cook
over low heat, stirring frequently, about 20 minutes. Remove from heat, let
stand 5 to 10 minutes before serving. Serve topped with scallions.

Denver Omelette in a Mug

Denver Omelette in a Mug

1 serving

1/4 cup chopped green bell pepper
2 tablespoons chopped onion
1/2 cup fat-free liquid egg substitute
1 ounce chopped 97 to 98-percent fat-free ham (about 2 slices)
2 tablespoons shredded fat-free Cheddar cheese
Orange slices, for serving, optional

Serving suggestion: Whole-wheat English muffin
Spray a large microwave-safe mug with nonstick spray. Add green pepper and onion and microwave until softened, 1 to 2 minutes.
Blot any excess liquid from the vegetables. Add egg substitute and microwave for 1 minute.
Add ham and cheese and lightly stir. Microwave until scramble is just set, an additional 45 to 60 seconds.
Let cool slightly. Garnish with orange slices and serve with an English muffin, if using. Eat up!

"We live in a quick-fix society," says Debra Mandel, PhD, a Los Angeles psychologist who specializes in eating disorders. "When we want something, we want it right away." Worse, we constantly see advertisements that convince us that we can lose inches by tomorrow, and be slimmer by next week. It seems like there's no harm in wanting to lose weight by yesterday. After all, it is possible. Isn't it? Not at all, insists Mandel. Because when it comes down to it, fast weight loss can't last, because it usually means adapting to very difficult eating habits and an impossible-to-live-with lifestyle.



Quick fix, fast failure
"[With quick-fix diets], our metabolism slows down, and eventually we're eating fewer and fewer calories but not losing weight," says Mandel. "This leads to anxiety, which prompts us to eat even fewer calories to try to lose. The body rebels against that even more."

So it's a vicious cycle. Because if you don't get enough nutrients — which is a major risk when you're going for a quick fix — your brain, and then your body, will, well, insist that you eat. To your body, it's nothing more than survival. But to you, it will feel like you're giving in and losing control. Then you'll feel like a failure, which might very well send you to the fridge.

It's a never-ending yo-yo cycle of weight gain, then loss, then gain again. Go for slow and steady weight loss (a healthy rate is two pounds per week or less), and not only will you be doing a service to your body, you'll also be more likely to keep that weight off for good. Isn't that better than rebounding?

Why slow weight loss lasts
"I'm glad my weight loss was slow for me because I feel like I really have made lifestyle changes," says Lyn, a meetings member. "I just keep at it. I continue to see slow progress but overall a great deal of success. Slowly but surely the weight comes off."

It's that kind of "through thick and thin" attitude that will take people from thick to thin for good, says Mandel. Losing weight slowly isn't just healthier, she says, it's a better investment. Not only are you dropping pounds, you're working on building habits that you'll be able to maintain. And those habits will help you maintain the weight you lost, so you can stay at your goal weight for good.

"Plus, you have more energy to live life in the present, because you're not starving and focusing on food," says Mandel. "You're creating a healthy relationship with food." That's the key to lifelong success.

Maintain a positive attitude
All that said, Cindy, a subscriber to Weight Watchers Online, isn't exactly glad she loses weight slowly. "'Thankful' might be a better word for it," she says. "At least I'm losing and not gaining."

Cindy has also held on during slow losses by maintaining a positive attitude: "I know this plan is something I can stick with for the rest of my life. It's definitely not a 'diet' that I'll go off for a long period of time. It's a lifetime commitment."
